Fall is awesome for many reasons, but ultimately pumpkin is the jam! Crisp air + changing leaves + pumpkin everywhere = perfection
I’ve been seeing lots of pumpkin spiced lattes floating around, and while I love coffee and I love pumpkin, I don’t love slurping down 380 calories with 50 grams of sugar.
So, I’ve tried several concoctions to recreate a clean, healthy, and delicious version of America’s favorite fall bebida. Without further ado…here is a great
tasting but budget and waistline friendly PSL:
1 cup unsweetened almond milk (I used the vanilla flavored)
1 Tbsp. pumpkin puree
¼ tsp. pumpkin pie spice
2 tsp. pure vanilla extract
1 cup brewed black coffee or 1 shot espresso
1 dash ground nutmeg (to taste; optional)
1. Heat milk, pumpkin puree, pumpkin pie spice, and vanilla extract in medium saucepan over low/medium heat; cook for 4 to 5 minutes, or until mixture is hot, but not boiling. It is ready when there are many small bubbles on the sides of the saucepan. **Note: this will not be a sweetened beverage. If you want to add some sweetness, use Stevia or Coconut Sugar to keep this beverage low calorie and low glycemic.
2. Remove from heat; mix vigorously with a whisk until frothy.
3. Pour coffee or espresso into serving mug; top with milk mixture.
4. Top with nutmeg if desired.
